It's a Soup Kind of Day

While I'm not dealing with snow blizzards or ice storms here in sunny Arizona, it is still a bit chilly and chilly days call for a warm bowl of soup. Yes, I just said that 60 degree weather is chilly. I thought that us chilly Arizonians and the rest of you snow bunnies would appreciate this soup roundup.

Soup Weather

It is finally soup weather here in Arizona (meaning that it is no longer 115 degrees!) and I've been searching my favorite food blogs for recipes. I found this amazing Spice Butternut Squash Apple Soup recipe from goodLife {eats} and I might give it a whirl this soup season. While I'm at it I might just make an extra batch and have a Soup Swap - has anyone done this? Sounds like fun! I found these adorable canning lid labels from A Sonoma Garden to add a handmade touch. How To: Worms and Dirt Pudding

Halloween is almost here and I don't know about you but I'm getting super excited! There is actually a chill in the Arizona air right now and it is finally starting to feel fallish. Mr. Designs by Vanessa and I are headed to a Halloween party tonight (as Jon & Kate Plus 8) so I whipped up this super easy dessert to share.

The Equipment:
Mixing Bowl
Whisk
Ziploc Freezer Bag
Mixing Spoon
Serving Bowl

The Ingredients:
Chocolate Jello Pudding (serves 6)
8oz Cool Whip Light
1 Package of Chocolate Oreo Cookies
Gummy Worms
Fat Free Milk


Step 1: Prepare the Jello pudding as directed on the box. I used fat free milk to cut down on the calories (the Oreos will have enough calories to go around).


Step 2: Chill your pudding in the refrigerator and start crumbling up those cookies. You can stick a few cookies in a ziploc bag and use a rolling pin (or your hands) to crush them. Kids love to help with this part.


Step 3: Mix in half of your crumbs and the full tub of cool whip into your pudding.


Step 4: Spoon into your serving dish (or you can keep the mixture in your mixing bowl) and top with the rest of your crumbs and gummy worms. It is difficult to tell how big the bowl is by the picture but this should serve around 10 people.


Step 5: Enjoy your worms and dirt! For birthday parties you can use a new flower pot as your serving bowl and add a fake flower to the top.

How To: Shark Infested Jello

Just when you thought it was safe to serve your guests a Halloween treat...

This shark infested jello is super simple to make and will be the hit of your Halloween party. When I say shark, I mean more of a fishy looking shark (a fishark) - partly because I couldn't find shark gummies but mainly because Swedish fish taste better (in my opinion) and look cuter. Yes, Halloween can still be cute!

The Equipment:
Mixing Bowl
Mixing Spoon
Clear Serving Bowls

The Ingredients:
Blue Jello
Swedish Fish


Step 1: Prepare the Jello as directed on the box.


Step 2: After mixing the ingredients together you can chill your jello for an hour, add your fishark, and refrigerate for another 4 hours before serving. I wasn't a fan of how the fishark tasted or looked after being soaked in jello so I just added my fishark to the top of the Jello.

Step 3: Serve and enjoy!

How-To: Apple Crisp Recipe

Fall is in the air and there is nothing better than a yummy apple crisp on a cold day (90 degrees can be considered cold here in AZ, right?). My friend Gina of Legally Brunette passed along this fabulous and super easy Apple Crisp recipe that I just had to share with you. I don't know about you but I like visuals when following a recipe so I decided to document my steps as I went. Enjoy!

The Equipment:
Large Mixing Bowl
Baking or Pie Dish
Paring Knife or Apple Corer
Measuring Cups
Pastry Blender
Cutting Board
Vegetable Peeler
Baking Sheet

The Ingredients:
6 Large or 8 Medium Apples
1 Cup Flour
1 Cup Sugar
1/2 Tsp Salt
1 Tsp Ground Cinnamon
1/4 Tsp Ground Nutmeg
10 Tbsp Butter


Step 1: Preheat your oven to 375 degrees.

Step 2: While your oven is preheating, start making your crumble topping. Combine 1 cup of flour, 1 cup of sugar, 1/2 tsp of salt, 1 tsp of ground cinnamon and 1/4 tsp of ground nutmeg in a large mixing bowl.


Step 3: Cut up 10 tbsp of butter and add to the mixing bowl. In order to cut out the trans fat, I used Smart Balance instead of regular butter and it still tasted yummy. I also didn't have any nutmeg so I added extra cinnamon. Don't be afraid to substitute ingredients or change a recipe.


Step 4: Using a pastry blender, blend your ingredients together until you get a crumbly consistency.


Step 5:
Wash and peel your apples. You can use a paring knife to do this but a vegetable peeler is so much easier.


Step 6:
Core and slice your apples. I used my nifty apple corer and this saved me so much time. I'm all about saving time in the kitchen!


Step 7:
Arrange your apples inside of your baking dish and sprinkle on your crumble topping.


Step 8: Place your dish on top of a baking dish with sides and place in the oven. Bake at 375 degrees for 50-55 minutes. Stick a fork into one of the apples to make sure that it is tender.


Step 9:
Serve with a dollop of whipped cream or ice cream and enjoy!

Yummy Low-Fat Ice Cream Sandwiches

If I had to eat the same thing for the rest of my life, I would hands down pick ice cream! Unfortunately, because I know exactly how many extra hours I would have to spend on the dreaded elliptical, I try to stay away from it. I recently discovered a new low-fat way to make your own yummy ice cream sandwiches. Here is the recipe...

Ingredients
Fat-Free Cool Whip
Low-Fat Graham Crackers

Directions
1. Spread 2 tbsp Cool Whip on a graham cracker square and top with another graham cracker square to make a "sandwich". You can make as many as you want.
2. Wrap individually in wax paper or foil, place into ziploc freezer and freeze.
3. Grab out of freezer and enjoy your yummy dessert!
